Framework fatigue is just a form of FOMO
When you are working on an existing project that a lot of people depend on, you rarely need to consider "all the frameworks out there" — except in rare cases like a genuine need to modernise a code base, or if there is a healthy culture that encourages you to explore possible options for well-isolated services.
When you are starting something new, you want to bring the ideas you have to life as quickly as possible, and you should stick with what you, or you and your team if you are not alone, know best.
So, if you are building something of importance, there is never actually a good time for you to worry about "all the frameworks out there" to the point that it fatigues you.
Framework fatigue is just a form of FOMO. Someone definitely benefits from causing that FOMO, and that someone isn't you.
